Nestled in the Mississippi Delta, the alluvial aquifer provides fresh, pure water for raising lobster-like freshwater prawn and channel catfish. Delta natives, Steve and Dolores Fratesi have produced farm-raised catfish for over 20 years. In 1995, intrigued by the potential of the freshwater prawn, they partnered with Mississippi State University in commercial prawn research.
They currently operate a catfish hatchery and one of the 3 freshwater prawn hatcheries in the continental U.S. The Fratesi's provide premium fresh and individually quick frozen catfish and freshwater prawns. They have played key roles in launching the now flourishing freshwater prawn industry. They founded the U.S. Freshwater Prawn & Shrimp Growers Association, Inc.
