Nordic Catch can pre-buy the catch of these Icelandic fisheries prior to the fish arriving to shore. Since the catch is preallocated to Nordic Catch before being caught, boats are essentially fishing to order. The fish is then sent to be processed and packaged the same day. By capitalizing on new airline routes, Nordic Catch is able to guarantee restaurants customers that their seafood was fished in the North Atlantic less than 36 hours from the time of delivery.
